This recipe can be used as a snack or a part of a full meal! Usually when you think of a meatball, you think of beef, but chicken is another level! I originally was going to cover these in buffalo sauce, but after tasting them, I decided to just have the buffalo sauce on the side with some ranch. I hope you enjoy these as much as I did!

  1. Start of with your pre-prep work. If your pork rinds need to be crushed, put them in a blender and pulse until they are your desired consistency. Be careful not to pulse them too long or they will have a powder like texture. Next, crack your egg into a small bowl and beat.n Place in a medium sized bowl once done.
  2. Cut your cream cheese into 12 small pieces.
  3. Place your ground chicken into a medium sized bowl. Add seasonings to the meat and mix thoroughly.
  4. Grab a piece of non-stick parchment paper and lay out on the counter top or on a pan.
  5. With a scooper, take out a portion of the ground meat and place onto the parchment paper and flatten. (you can do this step in your hand if you choose)
  6. Once flattened, place one of your pieces of cream cheese in the center of the ground chicken.
  7. Fold ground chicken around cream cheese. Remove from parchment paper and roll into a ball with your hands.
  8. Dip chicken ball into the bowl with the beaten egg until fully covered.
  9. Then place chicken ball into your crushed pork rinds and roll around until fully covered.
  10. Sit covered chicken ball on a plate to the side.
  11. Complete steps 5-10 until all 12 chicken balls are complete.
  12. Place all chicken balls onto your air fryer rack.
  13. Cook on 400 degrees for 12 minutes.
  14. Enjoy!
