This recipe can be used as a snack or a part of a full meal! Usually when you think of a meatball, you think of beef, but chicken is another level! I originally was going to cover these in buffalo sauce, but after tasting them, I decided to just have the buffalo sauce on the side with some ranch. I hope you enjoy these as much as I did!

0/0 steps made- Start of with your pre-prep work. If your pork rinds need to be crushed, put them in a blender and pulse until they are your desired consistency. Be careful not to pulse them too long or they will have a powder like texture. Next, crack your egg into a small bowl and beat.n Place in a medium sized bowl once done.
- Cut your cream cheese into 12 small pieces.
- Place your ground chicken into a medium sized bowl. Add seasonings to the meat and mix thoroughly.
- Grab a piece of non-stick parchment paper and lay out on the counter top or on a pan.
- With a scooper, take out a portion of the ground meat and place onto the parchment paper and flatten. (you can do this step in your hand if you choose)
- Once flattened, place one of your pieces of cream cheese in the center of the ground chicken.
- Fold ground chicken around cream cheese. Remove from parchment paper and roll into a ball with your hands.
- Dip chicken ball into the bowl with the beaten egg until fully covered.
- Then place chicken ball into your crushed pork rinds and roll around until fully covered.
- Sit covered chicken ball on a plate to the side.
- Complete steps 5-10 until all 12 chicken balls are complete.
- Place all chicken balls onto your air fryer rack.
- Cook on 400 degrees for 12 minutes.
