If you’re looking for a delicious but simple meal, this is it! This is a recipe that can be prepped and started in the morning prior before you leave for work and ready to eat by the time you get home. You can keep this meal simple by pairing it with cauliflower rice. Preferably steam in the bag frozen cauliflower rice. Or you can have it in a couple of low carb tortillas, topped with lettuce.

  1. Place the Salsa, cream cheese, and salt into the crock pot and stir.
  2. Place the chicken thighs on top of the salsa/cream cheese mixture.
  3. Cover and cook on low for 6 to 8 hours.
  4. When the chicken is soft enough, shred with 2 forks and combine with the salsa/cream cheese mixture.
  5. Serve over cauliflower rice or in low carb tortillas.
